Pancakes Not From a Box

The perfect recipe for light and fluffy pancakes!

Ingredients

  • 2 cups whole wheat flour, or all-purpose flour (or a combination)

  • 2 cups milk

  • 3 eggs

  • 1/4 cup vegetable oil

  • 1 tbsp baking powder

  • 1 tbsp granulated sugar

  • 1/2 tsp baking soda

  • 1/2 tsp salt

Instructions

  • In a large plastic bottle with a tight-fitting lid (or in a large mixing bowl) combine all the ingredients. If you’re using a bottle, cover with the lid and shake everything up into a smooth batter. If you’re using a bowl, beat all the ingredients together with a whisk or electric mixer just until smooth.

  • Pour a thin layer of vegetable oil onto a large skillet or griddle. Place over medium heat until a drop of water sizzles when it hits the pan. Pour the batter onto the skillet or griddle to form pancakes – large or small. Let cook until bubbles appear on the tops of the pancakes, then turn and cook the other side – about 1 or 2 minutes per side. Repeat with the remaining batter, adding more oil to the pan as needed. Pancakes should be golden brown and cooked through.

  • Serve immediately with maple syrup (or whatever your family likes).
