  • 1 ciabatta bun, split

  • 1 baked chicken finger, or strip, cut into long, thin pieces

  • 3 cucumbers, slices

  • 1 ring-shaped slice of red or green sweet pepper

  • handful of baby spinach

  • 2 tbsp crumbled feta


  • Layer ingredients on one half of the bun, top with the other, then wrap in plastic wrap.

  • Makes 1 serving.

  • In a serving: 313 calories, 14 g protein, 11 g fat, 44 g carbs
