Marmalade Glazed Salmon on a Plank

This marmalade glazed salmon recipe is easy to make but looks stunning, making it perfect for dinner parties and weeknight meals.

Ingredients

  • 1/3 cup orange marmalade

  • 3 tbsp apple cider vinegar

  • 2 tbsp fish sauce

  • 2 tsp julienned ginger

  • 1 tsp chopped garlic

  • 1/4 tsp Asian chili sauce

  • 1 1/2 lbs salmon fillets, with skin on

  • 1 cedar plank, soaked in water for 2 1/2 hours

Instructions

  • Combine marmalade, vinegar, fish sauce, ginger, garlic and chili sauce in a resealable plastic bag. Add salmon and squish out any air, so that salmon is submerged in the marinade. Let stand for 15 min at room temperature.

  • Heat barbecue to high.

  • Remove salmon from marinade, place skin-side-down on plank and spoon any ginger, or marmalade shreds on top of fillets, discarding rest of marinade. Place the cedar plank on barbecue and grill for 20 to 25 min, or until white juices appear, and the fish is cooked through.

Tip:

Using a whole piece of salmon makes for a dramatic presentation, but salmon fillets work just as well. Just remember to choose pieces that will fit on your plank.
