Crisp, Boston lettuce leaves provide the perfect home for last night's stir-fried chicken.
Heat oil in a frying pan on medium-high heat. Add chicken and cook for 1 min or until heated through. Add water chestnuts and soy sauce, and toss for 1 min to combine. Remove from heat and sprinkle green onions over top. Serve with Boston lettuce leaves, and hoisin sauce, if desired.
