Chicken Lettuce Wraps

Crisp, Boston lettuce leaves provide the perfect home for last night's stir-fried chicken.


Ingredients

  • 1 1/2 tsp vegetable oil
  • 2 cups cooked chicken thigh , chopped
  • 1/2 cup canned water chestnuts , chopped
  • 1 tsp low-sodium soy sauce
  • 1 green onion , chopped
  • 4 Boston lettuce leaves
  • hoisin sauce , optional

Instructions

  • Heat oil in a frying pan on medium-high heat. Add chicken and cook for 1 min or until heated through. Add water chestnuts and soy sauce, and toss for 1 min to combine. Remove from heat and sprinkle green onions over top. Serve with Boston lettuce leaves, and hoisin sauce, if desired.
