Ingredients

  • 12 toasted multi-grain baguette, slices

  • 1 tbsp butter, (softened)

  • 1/4 cup watercress sprigs

  • 2 sliced hard boiled eggs

  • 1 tsp finely chopped red onion

  • pinch salt

  • pinch black pepper

  • 1/4 cup deli-style cream cheese

  • 1 mini cucumber, sliced

  • 1 1/2 oz smoked salmon

  • lemon zest

  • 2 tbsp almond butter

  • 2 tbsp deli-style cream cheese

  • 1 sliced peach

  • drizzle honey

Instructions

  • Divide between 4 toasted multi-grain baguette slices: 1 tbsp butter (softened), ¼ cup watercress sprigs, 2 sliced hard-boiled eggs, 1 tsp finely chopped red onion, a pinch of salt and pepper.

  • Divide between 4 toasted multi-grain baguette slices: ¼ cup deli-style cream cheese, top with slices from 1 minicucumber, 1½ oz smoked salmon and a few threads of lemon zest.

  • Divide between 4 toasted multi-grain baguette slices: 2 tbsp almond butter mixed with 2 tbsp deli-style cream cheese, 1 sliced peach and a drizzle of honey.
