Basil with Couscous


  • Makesto servings


  • 1 1/4 cups water

  • 1 tbsp olive oil

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1 cup dried couscous

  • 1/2 cup slivered basil leaves

  • 1/4 cup chopped stuffed green olives

  • 1 tsp grated lime zest

  • 1 tbsp lime juice

  • pine nuts, toasted


  • Bring to a boil water, olive oil and salt and pepper. Remove from heat.

  • Stir in dried couscous, cover and let stand 5 minutes. Fluff with a fork.

  • Stir in slivered basil leaves, chopped, stuffed green olives, lime zest and lime juice. Sprinkle with toasted pine nuts and serve warm.
