Vanilla Pudding From Scratch

What's the only thing better than Vanilla Pudding? Vanilla Pudding From Scratch!


  • 3 cups milk, (low fat or skim are fine)

  • 1/3 cup granulated sugar

  • 1/4 cup cornstarch

  • pinch salt

  • 2 tbsp butter

  • 2 tsp vanilla


  • In a blender or food processor, combine the milk, sugar, cornstarch and salt. Blend just until smooth.

  • Transfer to a medium saucepan and place over medium-low heat. Cook, stirring frequently, until the pudding thickens and comes to a very gentle simmer. Continue to cook for one minute, stirring constantly to prevent lumps, and remove from heat. Stir in the butter and vanilla until combined. Pour pudding into serving bowls and cover with plastic wrap. Refrigerate and serve cold.
