This simple chicken recipe is perfect for topping a Greek salad or wrapping in a pita with tomatoes, cucumber and tzatziki.
500 g skinless, boneless chicken breasts, cut into 3/4-in. cubes
3 garlic cloves, minced
1/4 cup chopped parsley
2 tbsp chopped oregano
2 tbsp olive oil
2 tsp lemon zest
1/2 tsp salt
Mix chicken with garlic, parsley, oregano, oil, lemon zest and salt in a large bowl until coated. Season with pepper, if desired. Set aside at room temperature for 10 min.
Heat a large non-stick frying pan over medium-high heat. Add chicken mixture. Cook, stirring occasionally, until golden-brown and chicken is cooked through, 5 to 7 min.
