Scrambled Spaghetti

A great way to spice up breakfast or brunch!

Ingredients

  • 1 tsp vegetable oil

  • 1 cup diced “stuff”, such as onions, green sweet pepper, mushrooms, bacon, salami, sausage – practically anything

  • 1 cup cooked spaghetti, (with or without sauce)

  • 1 egg, lightly beaten

  • 1/4 cup shredded cheese

  • salt, to taste

  • black pepper, to taste

Instructions

  • Heat the oil in a small frying pan. Throw in the mixed stuff - whatever you're using - and cook over medium heat for 5 to 10 minutes or until lightly browned. If you're using uncooked bacon or sausage, you'll need a bit longer to make sure it's thoroughly cooked.

  • Now toss in the spaghetti, stirring until heated through. Pour in the beaten egg and scramble until the egg is cooked the way you like it. Remove from heat and stir in the shredded cheese. Sprinkle with salt and pepper to taste.
