Make-ahead Pancake Batter
Have homemade pancake batter at the ready by combining the dry ingredients and storing in a resealable plastic bag in the cupboard for up to 1 month.  

Fancy Porridge
Dress up prepared oatmeal or cream of wheat with golden raisins and chopped dried apricots. For a flavour boost, drizzle with almond milk.  

Easy Microwave Granola
Place 1 cup quick oats in a bowl. Drizzle 1 tbsp vegetable oil, then ¼ cup maple syrup, and stir to mix evenly. Microwave, stirring occasionally, until starting to brown, about 3 min. Stir in dried cranberries or blueberries and pepitas (shelled pumpkin seeds). Spread on a baking sheet to let cool. Granola will keep well in an airtight container for up to a week.

Waffle Makeover
Top toasted store-bought multi-grain waffles with crumbled cooked bacon and grated part-skim mozzarella cheese. Serve with a dollop of low-fat sour cream.

Simple Scramble
Crack eggs into a jar with a little water, a small dab of Dijon mustard and a pinch of pepper. Cover and shake well. Remove the lid and cover with plastic wrap pressed directly on surface. Replace lid tightly and refrigerate for up to 3 days.
