Scotch Eggs


Ingredients

  • 6 medium eggs
  • 1 cup panko bread crumbs
  • 2-3 cups canola oil
  • 500 g mild Italian sausage , meat removed from casings

Instructions

  • Cover eggs with water in a large pot. Bring to boil on high and boil for 4 to 5 min. Transfer eggs to a bowl of cold water and let cool for 5 min. Peel and pat dry.
  • Divide sausage meat into 6 equal portions. Flatten each portion into a 5-in. circle. Lay a peeled egg in the centre of a circle and wrap sausage meat around egg to cover completely. Repeat with remaining eggs and meat.
  • Pour panko into a shallow bowl. Coat sausage-covered eggs with panko bread crumbs completely.
  • Pour oil into a large pot until it reaches 1/2 in. up the side. Heat over medium. Add 2 eggs. Cook, turning eggs often, until panko turns golden-brown, about 2 min. Transfer to a paper towel-lined plate. Repeat with remaining eggs. Serve sliced, warm or cold, with a side of sautéed spinach and grape tomatoes, if desired.

Kitchen Tip

For a quick side, heat a large non-stick frying pan over medium. Add 1 tsp canola oil, then 1 pint grape tomatoes. Cook until tomatoes start to burst and soften slightly, 4 to 5 min. Add 6 cups baby spinach, 1 minced garlic clove and 1⁄4 tsp salt. Season with pepper. Cook until spinach wilts, 1 to 2 min.

Scrambled Egg Tacos


Ingredients

  • 2 cups tater tots
  • 4 strips bacon , cut in half
  • 4 large eggs
  • 1 small avocado , thinly sliced
  • 4 small flour tortillas
  • 1/4 cup chunky salsa
  • 1/4 cup shredded Monterey Jack cheese
  • 1/4 cup chopped cilantro

Instructions

  • Bake tater tots in oven following package directions, 19 to 21 min.
  • Meanwhile, arrange bacon strips in a single layer in a large non-stick frying pan and set over medium-high. Cook until crispy, 2 to 3 min per side. Transfer to a paper towel–lined plate.
  • Reduce heat to low, then discard all but 1 tbsp fat from pan. Beat eggs with 2 tbsp water in a medium bowl. Season with pepper. Pour eggs into centre of pan.
  • When edges start to set, about 30 sec, use a rubber spatula to gently push eggs from edge toward the centre of pan. Swirl the pan to allow raw eggs to run to the edges of pan. Repeat process until eggs are fluffy and softly scrambled, 2 to 3 min.
  • Arrange scrambled eggs, bacon, avocado and tater tots over tortillas. Drizzle with salsas, then sprinkle with cheese and cilantro, as desired. Serve immediately.

Egg Fried Rice


Ingredients

  • 4 tsp canola oil , divided
  • 1 onion , finely chopped
  • 2 garlic cloves , minced
  • 1 green onion , thinly sliced
  • 8 large eggs , divided
  • 1/4 cups oyster sauce or vegetarian oyster sauce
  • 5 cups day-old cooked rice (preferably jasmine)
  • 2 cups frozen mixed vegetables, such as peas, corn and carrots

Instructions

  • Beat 4 of the eggs with oyster sauce in a large bowl. Stir in rice until combined. Set aside.
  • Heat a large non-stick frying pan over medium-high. Add 3 tsp oil, then onion. Cook, stirring occasionally, until softened, 2 to 3 min. Add mixed vegetables and garlic. Cook until warmed through, 1 to 2 min.
  • Add rice mixture. Cook, stirring constantly, until egg is cooked and rice is hot, 4 to 5 min. Season with pepper. Divide rice mixture among four plates.
  • Return pan to heat over medium. Add remaining 1 tsp oil, then crack remaining 4 eggs into pan. Cook, covered, until whites are no longer runny, 2 to 3 min. Top each portion of rice with a fried egg. Sprinkle with green onion, if desired.

  • Spread pea mixture on toasted sandwich bread. Top each with an egg. Sprinkle with fresh thyme. Serve immediately.

Ingredients

  • 1 pint cherry tomatoes , halved
  • 1 shallot , thinly sliced
  • 1/2 tsp salt , divided
  • 1 small acorn squash
  • 2 tbsp canola oil
  • 4 eggs
  • 1/4 cup cilantro , chopped

Instructions

  • Preheat oven to 400F. Line a large baking sheet with foil. Lightly spray with oil.
  • Stir tomatoes with mini cucumbers, shallot and 1/4 tsp salt in a small bowl. Refrigerate, covered, until ready to serve.
  • Microwave squash until slightly tender, 3 to 4 min. Cut stem and pointed end off squash. Cut crosswise into 4 1/2-in. slices. Cut out and discard seeds to make rings. Stir canola oil with Madras curry paste and remaining 1/4 tsp salt in a small bowl. Brush over both sides of squash rings. Arrange squash on prepared sheet. Bake in centre of oven for 15 min, then carefully crack 1 egg into each ring. Continue baking until egg whites are set but yolks are still runny, 5 to 6 more min.
  • Drain tomato mixture of any excess liquid. Stir in yogurt and cilantro. Serve with squash.

  • 1 garlic clove , minced

  • 1/2 cup water
  • 1 tbsp lime juice
  • 4 eggs
  • 1/3 cup crumbled feta

Instructions

  • Heat a medium saucepan over medium- high. Add 1 tsp oil, then garlic and cumin. Stir constantly until fragrant, 1 min. Add beans and water. Continue cooking until beans are soft and most of liquid is absorbed, 6 to 7 min. Stir in lime juice. Lightly mash with a potato masher.
  • Heat a large non-stick pan over medium. Add remaining 2 tsp oil, then crack eggs into pan. Cook, covered, until eggs are just set but yolks are still runny, 2 to 3 min.
  • Place a tortilla on a plate. Top with beans, then egg and feta.

  • 250 g green beans , trimmed
  • 1 tbsp lemon juice
  • 1.5 tsp lemon zest
  • 1 garlic clove , minced
  • 1/8 tsp salt
  • 2 tbsp vegetable oil
  • 1 roasted red pepper , diced
  • 1/2 113 g goat cheese , crumbled
  • 4 cups mixed greens

Instructions

  • Bring a large saucepan of water to a boil. Add eggs and boil 4 to 5 min. Remove eggs and plunge into a bowl filled with cold water. Add salt to boiling water in saucepan, then add beans. Cook until tender-crisp, 4 to 6 min. Drain and rinse immediately with cold water. Pat dry.
  • Whisk lemon juice with zest, garlic and salt in a large bowl.
  • Whisk in oil. Stir in red pepper and goat cheese. Add beans and toss to evenly coat. Divide greens among two plates. Top with green-bean mixture. Peel eggs. Place an egg over each portion and slice open with a knife. Season with pepper.
